A NIGHT BUILT AROUND ACCESS, NOT ITINERARY

We visit three to four places over four to five hours — a mix of dining and bars, with the exact venues known only to Maki and me. You will not know where you are going until you arrive. The genre, the style, the neighbourhood: none of it is revealed in advance. What I can tell you is that every place on the list is somewhere Japanese people love, somewhere that has earned its reputation quietly, and somewhere that would not be easy — or in some cases possible — to enter without the right introduction.

Kobe is one of Japan’s great bar cities — and its history explains why. The port opened to the world in 1868, making Kobe one of Japan’s earliest points of contact with international food and drink culture. That cosmopolitan inheritance runs deep: in the restaurants, the drinking establishments, and the sensibility of the people who built them. The food culture here has always looked outward as well as inward, absorbing influences that never reached the rest of Kansai in quite the same way. Nowhere else in the region carries that particular character.

Akashi, twenty minutes away by train, shares the same spirit in a quieter register. Both cities sit at the heart of one of Japan’s great sake-producing regions — the famous Nada breweries of Kobe and the sake traditions of Akashi have shaped what people drink and how they drink here for centuries. An evening that moves between these two cities — through Kobe’s bar culture and Akashi’s seafood and local sake — is something you will not find on any platform or in any guidebook.
